Old nordic apple varieties,
grown regeneratively

Oktober 2022 is made from four carefully selected old apple varieties: Dronning Louise, Katharina, Høvereinnette, and Skaredsø. As seen in the tasting profile below, their individual taste profiles complement each other, resulting in an incredibly tasty and alcohol-free alternative to wine. It is bobbling terrific both as a stand-alone drink and pairs well with a broad range of courses.

The apples are grown regeneratively at the biodynamic fruit farm Bellingehus north of Copenhagen. The farmer has a holistic approach based on natural ecosystems. This also means that absolutely no pesticides are used. We are working with nature, not against it.

At Bellingehus, and in regenerative agriculture in general, the active development of biodiversity is very central both above and below the ground. It is about creating conditions that make the trees, plants, birds, insects, and microorganisms in the soil enter into a natural collaboration. Biodiversity is about variety and multitudes. This is why many apple varieties are grown here, together with many other types of fruit, berries, and nuts. Fruit grown under these conditions is both extraordinarily healthy and holds incredible taste qualities!

The fact that this approach, based on developing nature’s own ecosystem, also captures and stores large amounts of CO2 stably in the ground makes it sound almost too good to be true. But it’s tried and tested with nothing magical, at least not in the Harry Potter sense, about it and we need much more of it.

Medium-deep golden colour with a touch of amber

Nose
Medium intensity with aromas of fully ripe apples, melon, peach blossom, light caramel, and an undertone of bread and biscuits. Layered in with the sweet juicy apple scent, you’ll notice a steely mineral note.

Taste
Medium-sweet taste with medium acidity. The full body opens up pleasantly with intense flavor nuances dominated by ripe, juicy fruit notes, but with light floral notes in the background.

It has a richness that is balanced by crispy fresh acidity. Furthermore, an elegant mousse that freshens up and carries the aftertaste through—a long and lasting aftertaste.
